Job Summary
The Sanitation Technician is responsible for cleaning and sanitizing all production areas, equipment, and food-contact surfaces in the smoked salmon processing facility. This role is critical in ensuring compliance with food safety regulations, preventing contamination, and maintaining a safe and hygienic environment for seafood production.
Key Responsibilities
- Clean and sanitize processing equipment (smokers, slicers, vacuum packers, conveyors, brining tanks).
- Perform daily sanitation of floors, walls, drains, ceilings, and work surfaces.
- Disassemble and reassemble equipment for deep cleaning.
- Use approved chemicals and sanitizers according to SOPs.
- Monitor and record sanitation activities in log sheets.
- Follow SSOPs (Sanitation Standard Operating Procedures).
- Identify and report any contamination risks, pest activity, or equipment issues.
- Support pre-operational inspections with QA team.
- Maintain proper chemical storage and labeling.
- Adhere to GMPs (Good Manufacturing Practices), HACCP, and food safety policies.
- Wear required PPE and follow safety protocols at all times.
Required Qualifications
- High school diploma or equivalent (preferred).
- Previous sanitation or food processing experience preferred (seafood experience a plus).
- Ability to work in cold, wet environments.
- Ability to lift 40–50 lbs and stand for extended periods.
- Comfortable using chemicals and cleaning equipment.
- Basic understanding of food safety and hygiene practices.
- Ability to follow written and verbal instructions.
Preferred Skills
- Experience in seafood or smoked fish facilities.
- Knowledge of HACCP, SSOP, GMP, and FDA/USDA food safety standards.
- Attention to detail and strong work ethic.
- Ability to work independently and as part of a team.
