SOUS CHEF

Key Responsibilities:
- Managing daily kitchen operations, ensuring smooth and efficient service
- Oversee food preparation, presentation, and quality control, with a focus on seafood dishes
- Supervise and mentor kitchen staff, fostering a positive and productive work environment
- Manage scheduling and labor using HotSchedules to ensure proper staffing levels
- Operate and maintain the wood fire grill to prepare signature dishes
- Perform fish mongering duties, including filleting, portioning, and handling fresh seafood
- Ensure compliance with food safety, sanitation, and health regulations
- Collaborate with the team to develop new menu items and improve existing offerings
- Monitor inventory levels and assist with ordering and stock management
Mandatory Skills and Qualifications:
- Minimum of 3 years experience as a Sous Chef in a high-end or upscale restaurant setting
- Proven experience with scheduling using HotSchedules scheduling software
- Strong knowledge of seafood preparation, including fish mongering techniques
- Skilled in operating a wood fire grill and other specialized kitchen equipment
- Excellent leadership, communication, and organizational skills
- Ability to work efficiently under pressure in a fast-paced environment
- Knowledge of food safety standards and sanitation practices
- Passion for seafood cuisine and culinary innovation
- Fluent in Spanish and English
- Display the ability to use Excel, Outlook and Word applications
- Effectively cost out recipes and calculate plate cost
- Complete accurate inventory counts and product ordering
