About this position

Central City Brewers and Distillers is a craft brewery in the business of developing and selling international award-winning premium craft beer and high-quality distilled spirits brewed without compromise. Based in Surrey, British Columbia, CCBD was voted Canada Best Brewery of the Year in 2010 and 2012. Its Red Racer brand has become a cult icon among craft beer enthusiasts throughout North America. Founded in 2003 as a brewpub and liquor store in downtown Surrey, CCBD celebrated its 10th anniversary in 2013 with the grand opening of a brand new, 68,000 sq. ft. brewery and distillery on Bridgeview Drive. In 2019 we opened a 40,000 sq. ft. storage facility with approximately 2000 barrels of whiskey ageing in this facility. We are proud of being a local-Canadian Brewery that is currently expanding. In 2021 the company completed installation of a new canning line designated for contract manufacturing.

JOB SUMMARY

The Cellarman is responsible for providing support to the brewery team and performing daily cellar tasks while maintaining company policies and ensuring all our products meet the high-quality standards. This position reports to the Operations Manager. Please note this role will require the ability to rotate shifts.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES

  • Cleaning/sanitation cycles on tanks, brew day preparation, component cleaning (breakdown and rebuild of tanks), and other mechanical activities must be performed on a regular basis
  • Complete brewery cellaring operations such as daily fermentation records, cleaning and sanitation logs, task management systems, daily checklists, and Ekos workflow
  • Monitor the fermentation and conditioning tanks' temperature, pressure, gravity, and carbonation levels as well as the product quality. When you detect a quality issue, quickly report it to the QC Manager, Brewmaster, and/or Production Manager
  • Assist the Brewers in creating innovative procedures that will raise the caliber of both current and upcoming product lines
  • Perform plate filtration of product
  • Count yeast and determine pitch quantities as needed
  • Monitor, pitch, and analyze yeast quality and viability as appropriate
  • Responsible for maintaining cellaring process quality requirements
  • Complete cellaring procedures in a safe and efficient manner. This includes, but is not restricted to, product transfers, cold side ingredient additions, filtering, yeast harvesting, and CIP cycles
  • Responsible for following standard operating procedures
  • Monitoring and reporting on daily fermentation samples and product quality/fermentation data
  • Cross-functional understanding of brewery operations, fermentation tendencies, and other areas/disciplines that interact with or impact the brewing business and regulatory environment
  • Determine and share issues related to machinery failures or process breakdowns
  • Report any equipment malfunctions or mechanical difficulties to Production Manager and Brewmaster
  • Provide support to the Brewmaster and Production Manager in order to ensure that all inventory items and raw materials, including adjuncts, brewing additives, hops, and chemicals, are available, appropriately labeled, stored, and correctly accounted for in Ekos and business records
  • Report low levels of inventory to manager when necessary to ensure proper purchasing
  • Maintain the cellar and the whole brewing complex clean this includes the spaces outside the brewhouse, surfaces and equipment, such as tanks, walls, floors, and tank exteriors, as well as Brewhouse vessels, kegs, and other areas in the facility
  • Completes all assigned and necessary paperwork precisely and on schedule
  • Performs other duties as assigned
  • QUALIFICATIONS/DESIRED ATTRIBUTES

  • Capable of working night shifts
  • 1-3 year of general work experience required
  • Prior production/manufacturing machine operation experience preferred
  • Previous experience within high-speed industrial environment
  • Ability to operate manufacturing equipment
  • Ability to rotate shifts (morning, afternoon and night)
  • Ability to adhere to comprehensive guidelines, protocols, and standard operating procedures.
  • Ability to multitask and handle pressure-filled situations that arise in a dynamic, fast-paced work environment
  • advanced understanding of inventory control and ordering supplies, equipment, and/or services
  • The ability to function both individually and collaboratively in a group setting
  • advanced familiarity with all brewing and brewery-related systems, as well as the technical systems and software used in CCBD's manufacturing process
  • adherence to operating procedures, workflow, and organizational structure
  • Knowledge of quality assurance and control, ability to solve problems, and the ability to troubleshoot any issues relating to beer
  • Knowledge of brewing equipment including Grain Mill, Grain Conveyors, Related Equipment, Lab and Wort Analysis Equipment, Heated/Jacked Brewing/Water Tanks, Pressurized Tanks, VFDs, Pumps, Scales, Keg Cleaning Machine, and Heating and Boiling Equipment
  • The ability to stand for prolonged periods of time, execute repetitive hand and/or wrist motions, and carry out a variety of tasks with strength, dexterity, and mobility
  • The ability to regularly lift and/or move objects weighing up to 55 pounds, as well as kegs
  • High levels of mental and visual focus are needed to plan challenging work sequences and methods in order to assess and carry out product qualities. incredibly focused visual attention, such as when adjusting details subtly to manage fast-paced tasks or practice highly accurate muscle control 
  • ENVIRONMENTAL CONDITIONS: 

    The worker may be subjected to intense heat, strong odors, chemicals, electrical components, moving or heavy machinery, hot fluids, hot fluids, pressurized vessels and transfer lines, and potential for physical injury while carrying out the duties of this position. The frequent operation of the pump causes a moderate to loud noise level in the work environment.
